:oops: It seems that somebody... wasn't paying attention and was attempting one of them two chamber jobs in an area that only one chamber should be placed. boy is my face red...

Looks like you're drilling after shaping. That's fine, just drill a pilot hole with a brad point bit. Then the spoon bit won't wander so much.

I actually drilled a shallow pilot, however it was the first time with the skin on top of the plateau and i clearly didn't pay attention to the wandering! Do you recommend drilling a pilot the entire depth of the bore? I'm new to spoon bits and with a spade I didn't drill pilots and usually had good success.

I answered my own question by going back on the interwebs and reviewing spoon bit procedures. I should have in fact drilled a pilot down through the chamber to meet the airway.

I stop with the pilot a little shy of the airway so the wings of the drill don’t gouge the bottom of the chamber. But you want to guide it most of the way down.

When I start a chamber in plateau, I create a divot where I want to start with a pointed Dremel bit deep enough to allow the drill to start and not catch or skip on the nubs. I use a regular bit, but still stop a hair short of the draft hole.
