Does anyone know what he is using as a vise?

It looks like a self centering vise, not uncommon, and the jaws are lined with something padded yet stiff - my first guess would be cork but it looks more like a synthetic material of some kind. You could mimic it with any number of materials, from vibration-isolation rubber pads to old tires, I'd guess.

The lining looks like it may be thick, stiff leather.

10-4 on the leather.

As for using a four-jaw chuck as an x-y table, though it can (obviously) be done (albeit with a severely limited range of motion), I would not recommend it. Operator insanity would likely be induced within 72 hours.

Infinitely preferable is a true x-y table. Spin and glide to any position within .001" in seconds.

That's my guess, 4 jaw chuck and leather padding...

Next question for me is:
What is he going to do?
It's on the drill press table, appears to have a stem but no tobacco chamber.

It's a video on YouTube. He's about ready to drill the tobacco chamber.

Thanks, now I am wondering how he aligns the axes so that his mortise and tobacco chamber are in the same plane (and he stays within the bounds dictated by his bowl shape). Must be a lot of practice.
I've seen a video of him drilling the vent hole which he does last.
