Bacon!
My first try at homemade bacon. Ended up with just under 12 1/2 lbs of slab bacon from a 13 1/2 lb belly.
Dry cure applied and vacuum sealed. Three flavors (L to R): cracked black pepper, brown sugar & bourbon, and maple using homemade maple syrup.
Out of the cure and air drying before smoking
After 7 hours of cold smoking with pecan
Wrapped up in the fridge to chill before slicing

Ummmm... so You can expect me in about an hour so. Just enough time to get the skillet hot.

Re: Bacon!
Speaking of bacon, I tried something this morning I'd heard about: cooking bacon in the oven. I will say that it works and it was probably the best bacon I've ever had (sorry Mom). I used a 2 piece broiler pan that lets grease drain to the lower pan. 10 minutes at 400 degrees (lower element), flipped and gave it another 10 minutes. This was a medium thickness cut. Time will vary with thickness. Keep an eye on it for sure. No funky mess to clean up on the stove top.
May be old hat for some but it was my first try. That home-made bacon sure would go good with this method.
Forgot to mention that it is wise to keep your pan high in the oven. If you are too close to the bottom element things may get a bit smokey.

Re: Bacon!
Wow! Thanks everyone. I didn't realize there was a thread of the year, but since there apparently is here a little bit more to clinch it for sure.
Sliced the bacon last night.
Got to cook some up for the first time tonight. Fried up a few pieces to taste test.
Then took Oklahoma Red's suggestion and baked a bunch for dinner.
And dinner, eggs fried in the bacon fat, bacon and cheese on a fresh baked flaky biscuit.
The bacon is easily the best I've ever had, and I'm not saying this to pat myself on the back. There is so much more flavor and intensity in this compared to store bought. Now I'm going to have to find more time to make more because I think this will go fast.
If only I could make pipes this good.

For anyone that has been in the military and eaten bacon for breakfast in the chow hall, oven cooked in mass quantities lol.oklahoma red wrote:Speaking of bacon, I tried something this morning I'd heard about: cooking bacon in the oven. Been there, done that. However it never looked or tasted quite this good. It usually resembled (and tasted like) strips of tar paper.socrates wrote:For anyone that has been in the military and eaten bacon for breakfast in the chow hall, oven cooked in mass quantities lol.oklahoma red wrote:Speaking of bacon, I tried something this morning I'd heard about: cooking bacon in the oven. Actually, during my tenure in the Navy I can honestly say that I never had a really bad meal (that was prepared by Navy cooks). However, I spent a lot of time attached to the other branches of the military and (at that time) the crap that the Air Farce had to consume was beyond description. Hungry dogs ran the other way.

We Marines want you to know we appreciate the 200+ years of chauffeur service you boat-drivers have provided us with, too. Keep up the good work (such as it is).oklahoma red wrote:

You are very welcome. Somebody had to haul your asses around otherwise you would all still be sitting on your bayonets at Pendleton trying to figure out how to unscrew the jar lids. And of course I say that with the greatest of respect.LatakiaLover wrote:We Marines want you to know we appreciate the 200+ years of chauffeur service you boat-drivers have provided us with, too.
