Prefered method for shapping traditional Stummels?

My advice for turning briar: sharp tools and little bites at a time.

What tools do you guys use to round out the cut piece (assuming it's squared). Do you use a roughing gauge or just a chisle/scraper of some kind?

For pipes, I typically use one of two methods - depending on my mood. the first is simply use a roughing gouge. The other is to use a parting tool, and attack the briar from the direction of the tailstock.
