Technique is equally important as the materials used. The iron acetate can work well but only with nearly perfect technique. Oil stain and then water or alcohol also works or vice versa but also good technique must be used. Double alcohol works great but certain colors do not work well together.

French polish technique to remove excess while the shellac is tacky still. It will even out on all the surfaces. Super thin solution. Dip a wad of cheese cloth that has a micro amount of oil on it and then squeeze out and rub thoroughly.

It can be done a number of ways. I rarely will shape the stem with the stummel on the lathe because in my opinion it gives the shape a machined look. Matching it up by hand allows for there to be a graceful transition.

I think I'm understanding this Carvers choice correctly. So we are free to decide between a Rhodesian or Bulldog without parameters? Yes. You can pick bulldog or Rhodesian.
