I don't know what to advise about running stainless the entire length of the shank, but a reverse tenon for the stem is perfectly acceptable. I use a reverse tenon on bamboo shanks.

I posted the same question on another forum and was told that the shape was named after Lord Lovat of WWI fame and in a subsequent video link listened to multiple people pronounce it as LOVE-et. Learn something new everyday. English language pronunciations by English people shouldn't be relied upon...

What if you make a stencil/guide out of a piece of plexi glass, lay it on the sand paper and then trim it out with a razor knife? or would that still be too much work/time and not worth it? I don't know what Jeff's sandpaper costs, but that looks very cool, and I'd much rather buy than make. :) Rad...
